You’ll have to forgive our untimeliness these past few weeks and as we head into the bustling holiday season. On top of the usual hubbub, the soon-to-be Circelli’s are preparing last minute details and finishing touches for their wedding in just 16 days from now. The darling Torak’s are of course in the wedding and along with celebrating their first anniversary recently, we’ve all been spread quite thin and deadlines a figment of our imagination. Still, we press on, determined not to leave our loyal subscribers hankering for a recipe longer than we must.
Despite the dreary winter rain bringing in cooler temperatures, we still gathered gleefully at the Torak’s for our usual weekly dinner. There was plenty of time for chatting and catching up and even installing new switch plates on the light switches, to which Gilly was rather excited about, since this meal is one of those you can pop into the oven and forget about. Although we don’t recommend forgetting about it, definitely set a timer.
We all gathered around the table for a cozy meal while the rain pattered the tin roof over the patio right off the kitchen. Even Tammy Lynn couldn’t stay away and was putting on quite the show for her guests in hopes of chicken scraps, to which she was rather disappointed to never receive. She got lots of love instead. Gilly was thoughtful enough to offer up the remaining homemade apple pie from their anniversary to her dinner guests and we obliged with mouths gaped open. We chatted and finished off our wine while the pie warmed and the evening came to a close at the groans of four stuffed bellies and the chiming of a bedtime alarm. Does anyone really stay up past 10 anymore?
We started out this newsletter strong, with some showstopper recipes and crowd-pleasing presentation. Over the months, we’ve come to realize how much of a commitment it is to orchestrate such meals around our full time jobs, hobbies and time spent with family or alone with each other. There never seems to be enough hours in the day. However, no matter how long the ingredient list or how extravagant the presentation, the thing that matters most is the people you’re gathering with. We always head home with satisfied tummies and warmed hearts, so no matter what level of entertaining you find yourself at, we’ve got a recipe to meet you where you’re at.
Favorite Chicken
Serves 4
Ingredients
3 chicken breasts
1 onion, diced
Cream of chicken (2 cans)
Salt & Pepper
Instructions
Preheat oven to 375 degrees F.
Dice onion and spread evenly on the bottom of your casserole dish.
Cut chicken breasts into cutlets (slice through the middle of each breast to cut into thinner halves). Then, cut each cutlet in half down the center. Layer on top of the onion in casserole dish.
Dump the cans of “cream of chicken” into the casserole dish on top of the cut chicken breasts. Spread evenly. Add salt and pepper on top.
Cover with tin foil and bake at 375 degrees F for 1 hr. and 15 minutes.
Served over a bed of mashed potatoes with a side of macaroni. Pairs great with a Pino Grigio and fresh bread.
